Born as a reaction against the systematic forgery of Italian cuisine and products, the International Day of Italian Cuisines (IDIC) aims at protecting the right of worldwide consumers to get authentic and quality Italian cuisine when they go to eateries labelled as “Italian”. The 2022 Edition, the 14th, is very special for two reasons. Firstly, because for the first time will be celebrate on Italy’s national day (2nd of June), secondly because is a tribute to the late Tony May (1937 – 2022), the New York-based extraordinary restaurateur and educator, who has been among the greatest promoters of authentic and quality Italian cuisine in restaurants outside of Italy. For this reason the official dish of the 2022 IDIC is the Pasta e fagioli con le cozze (Pasta, cannellini beans and mussels), an universal symbol of Italian cuisine, which has its origins in Neapolitan coastal cuisine, in the city of Torre del Greco, where also Tony May was born.Joining the IDIC 2022 edition is easy: chefs and restaurateur all around must include Pasta e fagioli con le cozze, cooked according the official IDIC recipe, in their restaurants on the 2nd of June. As per IDIC’s past editions, chefs and restaurants joining IDIC will receive a personalised poster to be shown in their outlets. For each personalised poster there will be an NFT (Non Fungible Token) minted in 5 samples, to leave an indelible memory of the event.
Thousands of chefs, restaurateurs and lovers of Italian Food all over the world join the annual IDIC appeal, a tradition born in 2008, launched by itchefs-GVCI (Virtual Group of Italian Chefs), a network of culinary professionals working in 70 countries.
True Italian cuisine is part of the world’s cultural heritage; its celebration is not against creativity in the kitchen or innovation. It’s only about establishing some basic principles: when the name of a traditional Italian dish is used, that dish should be prepared in the traditional manner.
